Our food doesn’t follow trends – it follows the seasons, the soil, and the way the wind moves through the rosemary. The kitchen is led by a young, intuitive chef shaped by years in some of Europe’s most demanding kitchens, but rooted deeply in the flavours of the Adriatic.
