In the Renaissance gardens of Dubrovnik’s Palace Natali, a new gastronomic story is slowly unfolding. This historic setting now welcomes a fresh wave of creative energy in the kitchen, giving each dish its own distinctive signature.

With the scents of the Mediterranean and the stunning architecture of the palace, guests can expect an authentic gastronomic experience—subtle, refined, and unforgettable. Leading this culinary journey is Chef Duje Smajo, whose expertise was honed in Michelin-starred kitchens including Noel in Zagreb, The Angel at Hetton in Yorkshire, and Petersham Nurseries in London. At Natali, he brings a philosophy of intimate hedonism, blending Mediterranean tradition with contemporary techniques.

 

The menu is built around local ingredients, fresh fish, and seasonal vegetables, enhanced with creative touches inspired by Asian techniques, including buns, gunkan bites, and fermentations. Signature dishes include turbot fillet with tempura and vongole sauce, boneless frenched rack of lamb with truffle purée, and a refined beetroot, goat cheese, and hazelnuts. Every dish tells a story, simple in concept but refined in execution, with each ingredient playing a starring role. Natali continues to develop an approach towards sustainable gastronomy, focusing on seasonal menus and innovative use of ingredients to minimise waste.
